Spicy Apple Crumble & Custard

Ingredients

Apple crumble

  • 100 g butter, unsalted
  • 0.5 tbsp ground ginger
  • 1 Bramley apple, peeled, cored and finely chopped
  • 2 tbsp caster sugar
  • 100 g plain flour
  • 100 g brown sugar

Custard

  • 150 ml whole milk
  • 150 ml double cream
  • 1 vanilla pod, split lengthways and seeds scraped out
  • 2 egg yolks, large
  • 2 tbsp caster sugar

Method

Apple crumble

  • 1)

    Peel, core, and slice apples into 1/2cm slices. Place apples in a large mixing bowl and toss with sugar, lemon juice, flour, and cinnamon. Pour into a lightly greased 23 by 33cm baking dish, and spread out into an even layer. Set aside.

  • 2)

    In another large bowl, mix together the nuts, flour, oats, sugar, cinnamon, and salt for the topping. Using a pastry cutter or your fingers, gently work in the cold butter until pea-sized lumps are formed.

  • 3)

    Top apples evenly with mixture and bake until apples are bubbly and topping is golden brown, about 45 mins, rotating once halfway through cooking.

Custard

  • 1)

    Put the cream and milk into a large pan and gently bring to just below boiling point. Meanwhile, in a large bowl, whisk the yolks, cornflour, sugar and vanilla. Gradually pour the hot milk mixture onto the sugar mixture, whisking constantly.

  • 2)

    Wipe out the saucepan and pour the mixture back into it. Heat gently, stirring with a wooden spoon (see Steps 1 and 2, for stirring tips) until the custard is thickened, but before any lumps form. Eat hot or cold with the apple crumble .
